The Pumpkin Pie Martini is a delicious treat for autumn dinners or Halloween parties, but also tasty as a dessert for Thanksgiving meal. It blends vodka with the flavors of pumpkin, vanilla and spices – yum! This tastes like pumpkin pie in a glass.
Large glass jar with airtight lid
2 quart saucepan
Fine strainer or cheesecloth
4 cinnamon sticks
8 small slices of fresh ginger
½ vanilla bean, split open
1 T allspice berries
1 T whole cloves
6 star anise
2 cups sugar
2 cups water
Put sugar and water into pan over low heat. Stir until sugar dissolves. Add spices and stir occasionally. Keep simmering, and keep stirring, all ingredients over low heat for 30 minutes. Remove the pan from the heat and let the mixture steep for another 3 hours. If the mixture gets too thick (where it looks like honey), stir in more water. Strain mixture either through strainer or cheesecloth, into a clean jar and store in the refrigerator until needed.
Rim chilled glasses with cocktail rim sugar and set aside. Next, add liquids into ice filled shaker. Cover the shaker and shake well, until the shaker is frosted. Strain twice through a very fine mesh strainer into glasses and serve.
