Our s’mores popcorn ice cream cones take everything we love about summer food and combine it with our favorite crunchy snack.

Everyone knows what s’mores are, right? This campfire treat consists of toasted marshmallows and chocolate (usually Hershey’s) between two graham crackers. The heat of the toasted marshmallow presses against the chocolate to make it gooey and then the whole sandwich is smooshed together. It dates back to the 1920’s and the name is a contraction of “some more” as in, I’d like some more of that delicious treat. We can definitely get behind the idea of more tasty treats.

You’ve probably seen recipes for campfire cones. They’re ice cream cones stuffed with marshmallows and chocolate chips, then wrapped in foil and roasted in an oven or over an open fire. The heat melts the marshmallows and the chocolate chips and the result is similar to a warm s’mores treat.

Campfire cones are good. We have nothing against them. But, for some reason, when we see ice cream cones that are not filled with actual ice cream, we get sad. Just us? Fortunately there’s an easy solution to this which involves filling the cones with ice cream.

Oh, we’re still going for the whole s’mores taste although without the fire. We top the ice cream cones with toasted marshmallows, add a generous layer of our freshly popped popcorn and drizzle with chocolate sauce.

Do you need to add popcorn to make this a s’mores ice cream cone? Yes. OK, technically no. But still yes. Because ice cream cones need a crunchy element on top which is why we always dip ours in sprinkles. And, of course, we love popcorn and we love the texture of creamy and crunchy together. If the combination of creamy, ice cream, toasty marshmallows, chocolate sauce and crunchy popcorn is not enough, we can also go ahead and sprinkle on some of our popcorn seasonings. Does it need it? Yes. OK, technically no. But still yes.

You still have some decisions to make when assembling these. Do you want waffle cones, sugar cones or cake cones? We went with waffle cones because they taste great, hold their crunch well and are the largest. We don’t just want more, we want lots.

Then there’s the flavor of ice cream. Vanilla is the most versatile but there’s probably no wrong choice here. Is regular grocery store ice cream OK or do you have to make your own? That is totally a personal choice. And while we love homemade ice cream, we probably want our dessert quickly and don’t have time to wait. Finally there’s the choice of whether to use homemade or store bought chocolate sauce. We see nothing wrong with store bought here but sometimes we just melt some of our favorite chocolate chips and use that instead. Milk, semi-sweet or dark is totally up to you.

However you decide to construct your cones, we’re sure they’ll be delicious!

 4 Waffle cones
 2 cups Vanilla ice cream
 1 cup Marshmallows
 ¼ cup Chocolate sauce



Fill each waffle cone with two scoops of vanilla ice cream.


Cut each marshmallow in half and attach to a skewer or the tines of a large fork. Hold over an open flame (the stove top burner is fine) for a few seconds until the marshmallow catches fire. Blow out the fire and add the marshmallows to the ice cream.


Top each cone with a generous amount of popped corn and drizzle on the chocolate sauce.
