This Lavender Margarita recipe is a little bit of French, a little bit Tex-Mex, and includes a homemade lavender simple syrup tutorial. Tequila, lime, and lavender might seem like an odd combination, but the tart citrus creates a natural counterpart to the floral sweetness of the lavender and a silver tequila brings it all together. Want to make this a mocktail? Swap the tequila with a generous pour of lemon tonic or lemon seltzer water, for a lovely lavender limeade.
In a small saucepan over medium heat, add sugar and water. Add the Dell Cove Pure Lavender Water and 1 T of lavender blossoms to the pan, and stir constantly until mixture comes to a boil. Reduce the heat to low and let mixture simmer. Keep stirring until sugar is completely dissolved. Remove pan from heat and let the syrup steep and cool. Strain mixture through strainer, to remove lavender, and pour into airtight container and refrigerate.
Moisten glass rims with simple syrup. Rim chilled glasses with cocktail sugar and set aside. Add tequila and lime juice to ice-filled shaker. Shake vigorously and strain into glasses. Top with lavender syrup and a splash of seltzer. Garnish with a sprig of lavender and serve.
