Honey and Fig Cocktail

Don’t hate on the fig. This fruit is often overlooked in the rush of fall crops, and overshadowed by apples. This cocktail recipe is just the right amount of sweet (from the honey and figs), with just a bit of bite (from the ginger beer). Whip up a pitcher for a holiday party, or scale the recipe back to make a smaller batch for an intimate dinner with friends and family.

Ingredients

 3 cups fresh figs (rinsed and cut in chunks)
 1 tbsp sugar
 1 tbsp water
 4 oz freshly squeezed lemon juice
 2 tsp freshly squeezed lemon juice
 2 oz honey
 28 oz ginger beer
 20 oz vodka
 ice
 simple syrup (for moistening glass rims)
 extra figs for optional garnish

First, make the fig puree: Put the figs, sugar, water and 2 tsp of lemon juice into a blender, and blend until smooth. Measure out 1 1/3 cups (about 11 oz) of the fig puree and put into a bowl. Add honey and mix together until the honey and the puree are well blended.

Add this mixture to a very large pitcher or punch bowl. Add ginger beer, vodka, remaining lemon juice and ice. Stir to combine well.

Moisten the rims of your chilled glasses with simple syrup and garnish with Dell Cove Spices’ Light Gold cocktail rim sugar. Carefully fill glasses with your Honey & Fig cocktail and serve. Optional: garnish glasses with a thin slice of fig.
