Travel to the tropics with a glass of an oh-so-fruity classic rum drink, the Calypso Sun cocktail. There is no beverage quite so reminiscent of a tropical vacation than one with the unique combination of rum, coconut and pineapple. For these drink, we’ve enhanced the tropical flavor with fresh citrus and served the drink in festive glasses, rimmed with our teal cocktail sugar.
Note that this recipe calls for cream of coconut which differs from the coconut cream found floating at the top of a can of coconut milk. Cream of coconut is thick, quite sweet and a common cocktail mixer.
Drink this cocktail when you’re away on vacation or just when you wish you were.
Pour a tablespoon or two of the rimming sugar into a shallow dish. Run the edge of a cut lime or lemon around the rims of two cocktail glasses and dip into the sugar. Set aside.
Fill a blender with the light rum, fresh pineapple juice, fresh squeezed orange juice and cream of coconut. Blend until smooth. Fill the prepared glasses with the crushed ice and pour in the blended drink. Garnish with fruit and serve.
