Buffalo Chicken Wings Popcorn Square

Our recipe for Buffalo chicken wings popcorn combines one of everybody’s favorite snacks, chicken wings, along with our favorite snack, popcorn. Not only that but we top the popcorn with our Buffalo wing seasoning for a snacking platter of epic proportions.

Whether you call them Buffalo wings, hot wings, chicken wings or just wings, the basics of the dish are the same. Unbreaded chicken wings either deep fried or baked, then coated in spicy sauce and served with celery sticks and a dairy based dressing to cool the palate. In New York, where the recipe originated, the dip is a blue cheese dressing. But ranch dressing is sometimes served in other parts of the country.

The most common story about the origin of the dish is that they were invented at the Anchor Bar in Buffalo, NY in the early 1960’s. The Bellissimo family, who owned the bar, have circulated several different versions of how the recipe came to be. A competitor of the Anchor Bar, however, claimed that he began serving wings in sauce before they did. We may never know the truth but both restaurateurs were in Buffalo so the name applies either way.

The popularity of the dish has spread far beyond a small town in upstate New York. In addition, the term “Buffalo” is now used to indicate lots of hot and spicy dishes like Buffalo cauliflower, Buffalo pizza, etc. When restaurant chains like Domino’s Pizza and Pizza Hut began selling Buffalo wings, it helped the dish become a favorite football snack food.

The restaurant (or take-out) version of wings are usually deep fried but they’re easier to make in the oven at home. Since they are not breaded and the flavor comes primarily from the sauce, you won’t notice much, if any difference.

The main ingredients in Buffalo sauce are butter and a spicy, cayenne pepper based hot sauce. The Frank’s brand is probably the most well known for home cook use but there are lots of fiery sauces you can customize with. Make it as mild or spicy as you can stand.

Although this dish gets a crunch from the celery sticks, we prefer popcorn. And given how popular Buffalo wings are, it should come as no surprise that we included Buffalo flavor when we were creating our line of popcorn seasonings. Our blend of cane sugar, chili powder, Parmesan cheese, garlic and salt is hot and tasty with the heat hitting you a few seconds after you’ve tasted the popcorn.

Ingredients

For the Buffalo Wings:
 2 lbs Chicken wings
 2 tbsp Canola oil
 1 tsp Baking powder
 1 tsp Garlic powder
 ½ tsp Salt
 4 tbsp Butter
 ¼ cup Hot sauce
 1 tbsp Honey (optional)
 Celery sticks
For the Blue Cheese Dressing:
 1 cup Sour cream
 ¼ cup Mayonnaise
 1 Clove garlic, peeled and minced
 2 tbsp Lemon juice
 1 pinch Salt
 4 oz Crumbled blue cheese

Directions

Pre-heat the oven to 400° and line a baking sheet with aluminum foil. Ideally place a wire rack on top of the foil. Pat the chicken wings dry with paper towels.

In a large bowl, combine the baking powder, garlic powder and salt. Add the chicken wings and toss to coat.

Arrange the chicken wings on the rack and bake for 30 minutes. Flip the wings and continue baking for another 20 to 30 minutes or until they are crisp and golden brown.

While the chicken wings are baking, whisk together hot sauce, butter and honey. Toss the cooked wings in the sauce until evenly coated.

While the wings are in the oven, stir together the sour cream, mayonnaise, minced garlic, lemon juice and salt. Stir in the crumbled blue cheese.

Serve the wings immediately with the blue cheese dressing, celery sticks, popcorn and Buffalo seasoning.
