If you’re looking for a 4th of July themed cocktail, then this Star Spangled Watermelon Gin Slush is a must make. In fact, we predict it will be on repeat throughout the summer, long after Independence Day.

Of course we love red, white and blue to celebrate this holiday and we’ve got that covered with our patriotic stars and stripes cocktail rim sugar. It’s a blend of our Cloud White rimming sugar with the addition of irresistible little mini red, white and blue candy stars.

The cocktail itself is cold and slushy and oh so watermelony! Because the candy pieces are little more dense than regular rimming sugar, they won’t adhere to the glass with just the moisture of a cut lime around the rim. But a brush of corn syrup, or even simple syrup, holds them and makes your glass instantly festive.

Adding the scoop of ice cream on top is optional but, really, why not? Because when the sweet ice cream starts to melt into the tart drink, you get summery frozen cocktail heaven.

Star Spangled Watermelon Gin Slush

  • Author: Anita Schecter
  • Yield: 2 Servings

1 Tablespoon corn syrup
2 Cups fresh cubed watermelon
4 oz. Gin
2 oz. Elderflower liqueur
1 oz. Lime juice
1 oz. Simple syrup (optional if serving with ice cream)
Pinch of salt
2 Scoops vanilla ice cream (optional)

Pour a couple of tablespoons of the rimming sugar into a shallow bowl. Brush the edges of two tall hurricane or margarita glasses with the corn syrup and roll in the rimming sugar. Place in the freezer for a few minutes to firm up while you make the drink.

Add the watermelon, gin, elderflower liqueur, lime juice and salt to a blender and puree. Fill to the top with ice and puree until all the ice is crushed and the drink is slushy. Taste and decide if you’d like to stir in the simple syrup.

Pour into the rimmed glasses and freeze for a few minutes or up to an hour. Top with the scoops of vanilla ice cream before serving.
