Our recipe for popcorn ice cream is made by steeping real buttered popcorn in the dairy base to get an authentic popcorn flavor. And once the ice cream is churned, we serve it with a bit of extra crunch from even more popcorn sprinkled over the top. Finally, we top it all with one, or more, of our Dell Cove popcorn seasonings. Add the whole milk to a heavy bottomed pot and bring to a simmer. Stir in the popcorn, remove from the heat and allow to cool. Refrigerate for at least an hour but overnight would give a deeper popcorn flavor. Strain and discard the popcorn.
Make the ice cream by mixing together the milk, heavy cream, granulated sugar and salt. Pour the mixture into an ice cream maker and churn for 25 minutes or following the manufacturer’s directions.
When the ice cream is done, scoop it into a lidded container and freeze for at least 4 hours. Serve with additional fresh popcorn for crunch and top with your favorite Dell Cove popcorn seasoning.
