Our fresh plum daiquiri cocktail uses just a few simple ingredients to achieve the perfect balance of sweet and tart. Both flavors, though, are greatly enhanced by rimming our cocktail glasses with the Dell Cove™ Himalayan Pink cocktail Salt. Because, let’s face it, we all love the combination of sweet and salty together, right? Although you can use plum juice in this drink, we think it’s best when fresh, ripe plums are in season.

4 oz. Rum
1 oz. Fresh lime juice
1 oz. Simple syrup
2 Plums, pitted
Pour a little bit of the salt into a shallow dish. Run the edge of a cut lime around the rim of your cocktail glasses and dip them into the salt. Set aside.
Add the plums to a cocktail shaker and muddle until they’ve released their juices. You can also do this in a blender. Add the rum, lime juice and simple syrup. Fill the shaker with ice, shake well and pour into the prepared glasses. Garnish with a sprig of fresh mint, if desired.
