Dell Cove Spices & More’s Lavender flavored Cocktail Rim Sugar

Cut lemon for moistening the glass rim

4 oz. Gin

2 oz. Lavender honey syrup (recipe follows)

2 oz. Lemon juice

Ice

Lavender sprigs for garnish

For the Syrup:

1/4 Cup honey

1/8 Cup hot water

1 Teaspoon dried culinary lavender buds


Instructions

To make the lavender honey syrup, add the hot water into a bowl, then add the lavender buds. Whisk in the honey and keep whisking until evenly mixed. Let cool and allow the mixture to steep overnight (to really bring out the floral notes). The next day, pour the mixture through a fine mesh strainer to remove the lavender bits from your honey syrup. Don’t be in a rush on this step – it can take a bit for the syrup to be strained.

To make the cocktail, run the cut lime around the rims of two coupe style cocktail glasses and dip into the lavender flavored cocktail rim sugar. Set aside. Add the gin, lemon juice, lavender honey syrup and ice to a cocktail shaker. Fill with ice, cover and shake vigorously until the shaker is chilled. Strain into the prepared cocktail glasses. Garnish with lavender spring and serve.
