The cucumber mojito cocktail is a refreshing and minty beverage that’s perfect for warm summer days. Its more traditional cousin. the classic mojito, is a Cuban highball that consists of rum, sugar, lime juice, soda and mint. The sugar and mint are gently muddled together so that the bruised mint leaves release their essential oils. Then the rum and lime juice are added to dissolve the sugar.
The combination of citrus, sweetness and herbs is wonderfully refreshing but we’ve gone a step further by adding cool, crisp cucumber juice to the mix. We serve it over plenty of ice, extra mint and lime wedges for the ultimate long, cool sipper. This one is not to be missed so break out your muddler and enjoy!

Cucumber Mojito
- Yield: 2 Servings 1x
Ingredients
4 oz. Citrus flavored rum
2 oz. Simple syrup
4 oz. Cucumber juice, made by blending a whole, peeled cucumber
4 Fresh mint sprigs
Juice of 1 lime
Ice
Lime wheels for garnish
Mint leaves for garnish

Instructions
Place a tablespoon of the rim sugar in a shallow bowl. Run the edge of a cut lime around the rims of two cocktail glasses. Dip the glasses in the rim sugar, fill with ice and set aside.
Place the mint sprigs into a cocktail shaker and muddle the herbs. Add the rum, simple syrup, cucumber juice and lime juice along with a scoop of ice to the shaker. Cover and shake well, until outside is frosted. Strain through fine-mesh strainer into the prepared glasses. Garnish with lime wheels and mint leaves and serve.
