Chuy’s Shots of Gold were the result of us partnering with the team at O’Shaughnessy’s Public House in Chicago, and their bartender, Chuy. He created these delicious chocolate peppermint cocktail shots that would make pretty Christmas party drinks.

The base of the recipe is the creamy chocolate taste of Kerrygold Irish Cream Liqueur and it is the key to this flavorful beverage. The Rumplemintz, a strong peppermint liquor with a pronounced candy cane flavor, gives it that holiday mint freshness. The Creme de Menthe also delivers a sweet, minty flavor so we suggest you adjust the amount to your own taste. Start with half an ounce, taste, and add a bit more if you like. We love the festive green and gold color combination, too!

Chuy’s Shot of Gold

For the Shots:

1 oz. Rumplemintz

1/2 oz. Kerrygold Irish Cream Liqueur

Splash of Creme de Menthe

Simple syrup (to moisten shot glass rim)

Dell Cove Spices and More Metallic Gold Cocktail Rim Sugar


Pour a tablespoon or two of the rimming sugar into a shallow bowl. Brush the edges of two cocktail shot glasses with simple syrup and and roll in the rimming sugar.

To make the cocktail, add the Rumplemintz (peppermint liqueur), Irish Cream liqueur and Creme de Menthe to a cocktail shaker. Fill with ice, shake well, pour into the prepared shot glasses, and serve.
