This is definitely a taste of summer! Created by Erick Castro of Polite Provisions in San Diego, the Johnny Utah includes homemade celery seed simple syrup (easy to make), tequila, seltzer and lime for a light and refreshing treat. We’ve adjusted the recipe a bit (we’re not big fans of absenthe!) – hope you enjoy!
- 4 oz blanco tequila
- 1.5 oz fresh squeezed lime juice
- 1.5 oz celery seed syrup
- soda water
- lime wedge
- Dell Cove Spices’ Bloody Mary Spiced Salt
First, make your celery seed simple syrup: Add 1 cup of water to a saucepan over high heat, and bring to a boil. Reduce heat to a simmer and add 1 cup of organic sugar and ¼ cup of celery seeds. Stir frequently, until the sugar dissolves completely. Remove pan from heat and allow the syrup to cool. Once cooled, strain out the celery seeds. Place your syrup into an air-tight bottle and keep refrigerated for up to two weeks.
Next, take your chilled bar glasses, moisten rim with lime wedges and garnish rim with Dell Cove Spices’ Bloody Mary Spiced Salt. Fill glasses with ice and set aside.
In a cocktail shaker filled with ice, add the tequila, lime juice and syrup. Cover and shake until shaker is well chilled. Strain into glasses, top with soda water and serve.
