Lavender Bee's Knees
This is a drink for gin lovers and gin haters alike. (Really.) The crowing touch: the lavender honey syrup. Simple to make, it's the ingredient that adds a modern touch to this classic Art Deco cocktail.
To Make Lavender Honey Syrup:
1/4 cup honey
1/8 cup hot water
1 teaspoon dried culinary lavender buds
Add hot water into a bowl, then add your lavender buds. Whisk in the honey and keep whisking until evenly mixed. Let cool and allow the mixture to steep overnight (to really bring out the floral notes). The next day, pour the mixture through a fine mesh strainer to remove the lavender bits from your honey syrup. Don’t be in a rush on this step – it can take a bit for the syrup to be strained.
Rim your coupe cocktail glasses with Lavender flavored Cocktail Rim Sugar and set aside. Combine all of your cocktail drink ingredients in a cocktail shaker full of ice. Cover shaker and shake vigorously until shaker is chilled. Strain into cocktail glasses. Garnish with lavender spring and serve.
